A super easy soup that is delicious.
3-4 bunches of broccoli OR 1 large cauliflower OR a mixture chopped
2 tbls coconut oil
2-3 onions finely chopped
1 large potato chopped (no need to peel first)
3 cloves garlic chopped finely or 2 tsp minced garlic
fresh thyme, chives, parsley or your choice of fav herbs choppe
4 cups vegetable or chicken stock (clients, recipe for chicken stock added to recipe book soon) or use purchased
1/3 cup crea
Quickly sauté onion, garlic and potato in coconut oil. Add broccoli, cauliflower and stock to pot and simmer till veggies are tender.
Using a stick blender, puree the lot and add cream and herbs. Puree again if you prefer to have no ‘pieces’ of herbs. You may like to add a little extra stock if its too thick and this will depend. So see how it goes and add if necessary.
To serve, you can grate a little parmesan on top of each bowl or sprinkle a few chopped walnuts and spring onions or all of the above.
