These Lemon Balls have been very popular with most clients and their families loving them.

1 cup cashews

1 cup shredded or desiccated coconut

Juice and rind from 3 lemons (adjust to suit your taste-we love lots often using 3-4 lemons)

1 tsp vanilla extract

1 tbs maple syrup-optional, we don’t use it and neither do most clients


Pop everything into a food processor and blitz till it comes together.

Roll into bite size balls and roll in extra coconut if you like
