These nut free bites are a great, sweet alternative for those that cannot eat nuts. They’re lower in fats than some of our other sweet recipes, but higher in carbohydrates. Still full of nutrition and don’t contain any ‘nasties’. Enjoy
1.5 cups dried dates
1.5 cups dried apricots
1/2 cup each of rolled oats and desiccated or shredded coconut (you could use 1 full cup of either of these instead of the mix)
2 tsps of cocoa (or use cacao)
1 tbsp melted coconut oil or for a nutty taste, 1 tbsp of tahini. (i’ve used the tahini and it gives them a nutty taste without the nuts)
More coconut for rolling them in
Simple blitz all ingredients together, adding water as necessary so it comes together. You’ll have to blitz for quite a while to get the dates and apricots to smish up properly. Only add enough water to get it to a sticky dough.
Roll into bite size balls and roll in coconut before refrigerating.
