pesto

 

1 garlic clove or 1 tsp minced garlic

1 cup unsalted shelled pistachios or pine nuts or cashews or any nuts you care to try

up to 1/2 cup olive oil

1 tsp lemon juice or maybe a little more

1/4 cup fresh basil leaves (or use mint for a pesto that is divine with lamb)  You can use more mint than this in the recipe without increasing other ingredients

 

Blend together all ingredients using about 1/2 of the oil for a start. Add more oil if needed while blending.

Taste and adjust lemon juice and garlic.
